Ingredients
Flaky pastry
- 80 g mature cheddar cheese, cut into pieces (approx. 2 cm)
- 200 g unsalted butter, cut into small pieces (2 cm) and frozen
- 300 g plain flour, plus extra to dust
- 1 tsp cumin seeds
- 130 g chilled water (see Tips)
- 1 tsp freshly squeezed lemon juice
- ½ tsp sea salt
Beef and potato curry
- 180 g brown onion, cut into pieces
- 3 garlic cloves
- 50 g vegetable oil
- 10 - 12 fresh curry leaves
- ½ cinnamon quill
- 70 g tomato paste
- 1 tbsp garam masala
- 1 tbsp fennel powder
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 - 1 ½ tbsp curry powder
- 1 tbsp Kashmiri chilli powder
- 1 tsp ground turmeric
- 1 tsp sea salt
- 750 g beef chuck steak, cut into pieces (approx. 3-4 cm)
- 300 g water

- plain flour, to dust
- 100 g frozen peas
- 300 g potatoes, peeled and cut into pieces (approx. 1-2 cm)
